Pan-Seared Duck with a Savory Cherry Compote

We have enjoyed many different preparations of duck, especially during our time and Europe. Although restaurants here in Colorado tend to offer various meals of game, it isn’t necessarily easy to find them in the store. While we were living in Frankfurt, our butcher always had lamb, duck, goose, and other gamier items available, but unfortunately it just isn’t the case here. We were able to get a whole duck, but since we were just cooking for the two of us, we decided to cut it into parts which gave us a boneless duck breast and a duck thigh with the leg still on. We often cut up a whole chicken, but duck is a little more difficult, although worth the effort. By cutting the duck into pieces, it allows you to pan sear it as opposed to roasting it and that makes it even more tender. We froze one half of the duck to have at a later date and cooked up the breast and thigh for dinner. Duck goes really well with fruits such as orange or cherry, so we made a cherry compote to go with the duck. The compote (or sauce) was more savory than sweet, which is what we prefer. It was extremely delicious and definitely reminded us of duck that we’ve eaten during several of our travels.

Ingredients for the Cherry Compote

INGREDIENTS

  • 1/2 Duck – breast deboned and thigh deboned with the exception of the leg (if you can get two deboned breasts, that would work as well)
  • 1 Shallot – chopped
  • 2 Garlic Cloves – minced
  • 1 cup Cherries – fresh or frozen, pitted
  • 1/2 cup Chicken Stock
  • 2 tbsp Cherry Preserves
  • 2 tsp Honey – preferably fresh or organic
  • 2 tsp Rosemary – chopped
  • 1/2 tsp Garlic Powder
  • 2 tbsp Fresh Lemon Juice
  • 1 tbsp Unsalted Butter
  • 3 tbsp Vegetable Oil
  • Salt and Pepper to taste

INSTRUCTIONS

Using a very sharp knife, score the skin of the duck. Season the duck with salt, pepper, garlic powder, and 1 teaspoon of the rosemary. Let the duck come to room temperature. While the duck is coming up to room temperature, heat 1 tablespoon of the oil in a small pot. Add the shallots and cook for 3 to 4 minutes or until the shallots are soft and translucent. Add the garlic and cook for another minute just to let the garlic bloom. Add the cherries, cherry preserves, chicken stock, honey, and the remaining teaspoon of rosemary. Continue to simmer for 10 minutes while the duck is cooking. When the sauce has slightly thickened, add the butter and lemon juice and keep warm until the duck is finished. Heat the vegetable oil in a cast-iron skillet to medium-high heat. Place the duck skin-side down and don’t touch it until the skin has released from the bottom of the skillet, at least 5 to 10 minutes. Once the skin is browned and the fat has rendered, turn the heat down to medium and flip the duck over to finish cooking, about another 8 to 10 minutes (or until an instant read thermometer reads 160 degrees). To serve, drizzle the cherry compote over the duck and place the rest in a bowl for people to add more as they eat.

The French Quarter in New Orleans

Certainly the highlight of any trip to New Orleans, Louisiana is visiting the French Quarter. With a history that dates back to 1718, there are many different sites to see when spending time in the French Quarter. One of the first things that comes to mind when talking about the French Quarter is Bourbon Street, which is in the heart of the neighborhood. Regardless of the time of year, it can be raucous with many different bars, nightclubs, and restaurants. Although there are parades and special events during Mardi Gras, the street is pretty much an outdoor party all year as people are allowed to take drinks with them in plastic cups as they walk the streets. Although it can be a fun street to visit, there is certainly a lot more to see in the French Quarter than just Bourbon Street.

Jackson Square with its bronze statues of Andrew Jackson and proximity between the St. Louis Cathedral and the Mississippi River is an absolute must to visit. It is a beautiful park and is usually surrounded by artists selling arts and crafts as well as performers entertaining the crowds that gather in the area. A walk along the river or taking a tour on one of the historic paddle ships such as the Natchez should also be on your agenda. Obviously the St. Louis Cathedral, which is the oldest continuously operating catholic cathedral operating in the United States, is worth spending about an hour visiting. Located next to the cathedral is The Cabildo where you can see exhibits providing information on the history of New Orleans and Louisiana.

In addition to the restaurants and typical tourist shops, you will find several voodoo shops in the French Quarter where you can buy yourself a voodoo doll or perhaps have a psychic reading done if you are interested. You will also find many different tour companies that offer ghost and cemetery tours and you will find many of them walking the streets after it the sun goes down. If you want a more lively way to spend your evening, there are lots of nightclubs offering live music, including jazz, Dixieland, as well as modern rock bands. As the night goes on, Bourbon Street becomes livelier and livelier and it is certainly not an environment for anyone under the age of 21.

Any trip to New Orleans should include sampling many of the varieties of food that are very specific to the region. You can find many different styles from inexpensive to the most formal meals. You should certainly expect long lines at many of the restaurants that don’t take reservations and for those that do accept them, you should plan to make reservations well in advance. In addition to the various foods such as po-boys, oysters, seafood, and crawfish, there are also several specialty drinks that can be found. Having a Hurricane or Sazerac are certainly worth having if you are looking for a unique adult beverage.

Overall, we would say that spending time in the French Quarter is a lot like visiting the Las Vegas Strip, meaning that it is probably worth about three or four days and is certainly not a great place for children to visit after dark. Regardless of the time of day, we really enjoyed walking the streets of the French Quarter including Royal Street with all of its art galleries, Jackson Square, and even spending time on Bourbon Street.

Delicious Apple Bourbon Cocktails – Perfect for Autumn

Autumn is a time for special occasions, celebrating, and comfort food. It isn’t all about the food, though, it is also a time for special drinks and cocktails. Obviously we love gluhwein, mulled ciders, and other autumnal drinks, but we decided to do something a little different. We made an Apple Bourbon Cocktail (an “ABC” for short) with apple cider that was infused overnight with spices. The warmth of the spices pairs really well with a quality bourbon and it is definitely a festive cocktail. If you don’t want the alcohol, you can serve it as “mocktail”, but we prefer the version that has a little bit of a kick. We really enjoyed it, so hopefully you will as well.

Autumn Spices

INGREDIENTS

  • 2 cups Apple Cider (not apple juice, it needs to be a true apple cider)
  • 2 Cinnamon Sticks
  • 2 Whole Cloves
  • 1 Star Anise
  • 8 oz Bourbon
  • Apple Slices for garnish
Everything You Need for an Apple Bourbon Cocktail

INSTRUCTIONS

Place the apple cider, cinnamon, cloves, and star anise in a mason jar and put in the refrigerator for about 24 hours (at least overnight). To serve, strain the apple cider and add 4 ounces of apple cider to 2 ounces of bourbon in a rocks glass (ice cubes are optional as the drink is meant to warm your insides). Garnish with an apple slice and serve. Makes 4 servings. Cheers!
