Semi-Deconstructed Turkey Pot Pie

One of the meals that we had when we visited Strasbourg was a very rustic chicken pot pie. Because of the fact that we wanted to share it, they basically prepared it deconstructed for us, which we actually enjoyed. We decided to make our own version of this hearty meal and it turned out quite delicious. Needless to say, it certainly wasn’t as elegant as the meal we had in France, but since it was just a weeknight meal for the two of us, that was perfectly fine. We happened to have left over turkey, so that is what we chose to use, but you could easily do something similar with beef, chicken, or even lamb. You could also use a puff-pastry instead of biscuits, but we liked the biscuits as it made a cross between a pot pie and dumplings. Obviously this recipe is very versatile, so you could add in different vegetables to create your own spin on the meal. It is really about what leftovers you may have on hand and what flavors you prefer.

INGREDIENTS

  • 3 cups Turkey Stock (we used homemade stock, but you can use store bought chicken stock)
  • 1/2 cup All-Purpose Flour
  • 1 cup Red Onion – chopped
  • 1 cup Celery – sliced thin
  • 1 cup Potatoes – peeled and diced
  • 1 cup Carrots – peeled and sliced
  • 1 1/2 cup Cooked Turkey – diced
  • Biscuits – store bought or homemade
  • 1 tsp Fresh Thyme
  • Salt and Pepper to taste

INSTRUCTIONS

Sauté the onion and celery in a skillet over medium-high heat until they are soft and translucent. In a medium sauce pan, melt butter and stir in the flour to create a rue and add the stock and continue heating on medium-high heat until it simmers (alternately, you can heat the stock in the pot and mix the flour and some cold water in a bowl to create a slurry and then add that to the simmering stock). Add the carrots, potatoes, and cooked onion and celery to the broth. Reduce the heat to low and simmer for about 2 hours, stirring continuously. Once the potatoes and carrots are tender, the stew is done. Pre-heat an oven to the temperature in the biscuit directions (350 degrees in our case). Pour servings of the stew into oven-safe bowls and put the uncooked biscuits on top of the stew trying to cover it is fully as possible. Place the bowls in the oven for the time in the biscuit directions (16 minutes in our case). Remove and serve.

Christmas Markets in Europe

We were told by many people about how wonderful the Christmas markets in Germany and other places would be and they were certainly right. Whether in our home town at the time, Frankfurt, or some of the places we visited during the holiday season like Prague, Vienna, Strasbourg, Cologne, and others, we were fortunate to go to several different Christmas markets. We had made the assumption that each city would have one central market that everyone would visit, but that didn’t turn out to be the case. Each city has several different markets, usually one near the main cathedral, but then there are a half dozen or so more markets at different popular areas as well.

In today’s world, unfortunately, any event that brings a large number of people together also means that it becomes a target for those who wish to harm people. That means that a common sight at most of the markets that we visited were armed police and plenty of barricades. Fortunately, that doesn’t stop most people from going out and having a good time, shopping, drinking, and eating at the various stalls in the markets. The Christmas markets are truly wonderful and it would be a shame if people didn’t bring their families out to enjoy them. For children, the markets can be a wonderland with all of the decorations, candy, music, and general merriment. They are a playground for adults as well with the gluhwein, sausages, and gift stalls for shopping.

A Little of Everything in Cologne

You might ask us what our favorite Christmas market was, but we couldn’t choose a favorite as they were all great in their own ways. Perhaps one of the most unique might have been the one in Vienna, Austria, where they turned the sidewalks into skating rinks. Although the market at the harbor in Cologne was also pretty interesting with its nautical theme. Of course Frankfurt has a special place in our heart since it was our home for a time.

Obviously there were plenty of beautiful Christmas trees at each of the markets and they are beautiful both during the day when you can see the ornaments as well as at night when the lights shine brightly. One of the biggest trees that we might have seen was actually in Brasov, Romania, which we visited just shortly after Christmas and the markets had just completed. There is nothing like a beautiful Christmas tree to get you in the mood for the holidays.

So, the advice that we would give to anyone traveling in Europe during the holiday season is to get out and enjoy the Christmas markets wherever you can. We have even gone to a wonderful Christmas market here in Denver, Colorado, and intend to visit one in Chicago over this holiday as we visit our youngest daughter. Our very first Christmas market was in Stratford-Upon-Avon in England, but the tented stalls were nothing in comparison to the wooden stalls with their ornate decorations that we saw in Germany. If you do go, have a gluhwein for us, but be careful, sometimes they add rum to them and the alcohol can sneak up on you.

Every Trip Makes You a Smarter Traveler

When we look back now to our very first overseas trip many years ago and compare it to the way that we travel these days, it was very different. We spent two weeks traveling to Paris, London, Stratford-Upon-Avon, and Manchester, spending anywhere from four nights to as little as one night in each location. It was November, so we knew that we would have a variety of weather conditions, so we packed two full suitcases, one large and one medium, each. We took a variety of shoes to account for outfits, casual, dressy, etc., so that we prepared for walking during the day and going out to a nice dinner at night. There we were, dragging suitcases through airports, train and subway stations, and getting glaring looks from taxi drivers who had to put a suitcase in the passenger seat because they wouldn’t all fit in the trunk/boot. To make things worse, we had to pay overweight luggage charges on the flights and then we bought souvenirs throughout our trip. We ended up buying another duffle bag just to fit the things that we bought. Hard to believe, but true.

Clearly we were not savvy travelers. We have learned so many things over time. Now we try to get everything into a carry-on bag if we can and we can’t, we put everything into a single suitcase that we share between the two of us. In order to do that, we limit what we take. One or two pairs of shoes at the most, choosing a single color tone so that you don’t need different belts, shoes, make-up, etc. If the weather is going to fluctuate, take clothes that can be layered so that the same clothes can be used multiple ways. We have even found laundry sheets for travel that can be used to wash clothes in a sink and then hung up to dry. We will also take advantage of dry cleaning or laundry services at hotels.

We try not to change hotels every few days. Sometimes that means that it costs us a little extra to have a home-base and then making short, overnight trips from that location. Even if we are moving around, limiting the amount of stuff that we carry with us means that we have less to lug around, less to pack and unpack, and less to worry about getting lost in transit. We also roll our clothes so that they take up less space in the suitcase. It makes no sense, but rolling really works, you can pack more in less space. We bought a luggage scale and always weigh our suitcases after packing them to be sure that we never get surprised by an overweight charge by an airline.

We have learned a lot of other things, such as how to relate to different cultures, and how to dress appropriately for the country that you are visiting, and how not to look like a tourist when walking streets of a foreign city.  We also ensure that we learn the basics of hello, goodbye, and thank you as well as other key phrases in the language of the country and always try to be a friendly traveler. There are many other lessons that we have learned since that first, comical adventure, but it is fun to reminisce about how naive we were during our first trip to Europe.
