Daily Post Photo Challenge – Graceful

We have been fortunate enough to see many various tranquil and graceful scenes throughout our lives. Sometimes it is a result of travel, but often it is just by the nature of living in such a beautiful state as Colorado. With that said, however, we decided to select this photo from one of our visits to Cabo San Lucas of a sailboat sailing on the ocean with the sun setting in the background. It is not only a relaxing image, but clearly represents our ability to become with nature, which is when we, as human beings, are at our best.

It was the first time, and it wouldn’t be the last. Two weeks after our youngest daughter moved off to college, we boarded a plane and flew to Cabo. It wasn’t that we didn’t miss her, it was just that we were ready to start the next chapter of our life as a couple.  From the moment that we arrived in Cabo, we fell in love with the town.  We went during the off-season, so there weren’t a ton of people, but even during the busy season, it isn’t over-crowded.  Within the city limits, there is a height restriction of seven stories, so there aren’t the enormous resorts with thousands of rooms like there are in places like Cancun.  Since our first trip, we’ve been back a couple more times and our passion for Cabo has only grown.  It is our go-to location when we want a vacation, not travel, but a “sit on the beach with a drink in your hand, complete relaxation get-away”.

Living Like a Local

This is our entry for this week’s Discover Challenge: Opening Line.  Not only do we like to go back to Cabo, but we like to revisit our photos from Cabo as well, they are soothing and calming.  All of these were taken during our very first visit to Cabo, which actually ended with a hurricane coming into town on the day that we left.  We have shared other pictures from this trip in the past, so these are all photos that we haven’t previously shared.

Guacamole – A Taste of South of the Border

One of things that we love about travelling to Mexico is that when you order guacamole, you get a lot of guacamole. Here in the United States, you would think that avocados were a precious commodity by the way they charge you for a couple of tablespoons of guacamole.  There are a lot of good uses for avocados, but guacamole is probably our favorite.  It can be used with chips as a dip or it can be used as a spread on a sandwich.  We leave the seeds in the jalapenos, but if you don’t like it as spicy, the seeds can be removed.  This recipe is for a small batch, but obviously it can be increased if you are serving it for a larger crowd.

  • 2 Avocados – diced
  • 1 Medium Tomato – finely diced
  • 1 Jalapeno – finely diced (seeds removed if you don’t want it spicy)
  • 1 Garlic Clove – minced
  • 1 tbsp Red or Yellow Onion – finely diced
  • Juice of 1 Lime
  • Salt and Pepper to taste

Instructions

Cut the avocados in half, using your knife to carve around the large seed.  Twist the avocado to separate the two halves, the seed will remain in one of the halves.  Using a knife, carefully chop into the seed so that the knife is slightly embedded.  Twist the knife to remove the seed and carefully remove the seed from the knife blade.  Use a spoon to separate the flesh of the avocado from the skin by tracing the spoon along the inside of the skin and place the flesh into a medium bowl.  You can dice the avocado prior to removing it from the skin or after it is in the bowl.  Add the rest of ingredients and mix thoroughly.  If you prefer a creamy guacamole, you can mash the avocado dices as you stir, or leave some of the dices whole if you prefer a chunkier guacamole.  Serve with chips.
