The Food of Budapest, Hungary

It certainly shouldn’t be surprising that you can find just about any type of cuisine that you would like in a city the size of Budapest. Especially in the tourist areas, you can find restaurants featuring traditional Hungarian dishes, but you are just as likely to find Italian, Asian, Mediterranean, and even Mexican restaurants. It is also not surprising that you can find plenty of American fast food restaurants throughout the city. When it comes to Hungarian food, it is definitely meat and starch (potato/rice) forward and vegetables are almost an afterthought. One of the things that did surprise us were the number of restaurants specializing in burgers that we found everywhere. Not fast food restaurants, but just restaurants that offered many varieties of burgers on their menus.

Goulash soup was probably the most common item that could be found on almost any Hungarian menu, but it is truly a soup and not what most of us think of when we hear the word goulash. You will also find meat stews listed and sometimes it will even be listed as goulash stew. Another common menu item is Chicken Paprikash, which is chicken and cottage cheese noodles covered in a paprika sour cream sauce. Cottage cheese noodles are pretty similar to spätzle. You will find many menu items that feature “letcho”, which is a pepper and tomato stew that can be combined with different proteins or eaten on its own. Another common item that you find as an appetizer is duck liver pate with the local flatbread, very similar to naan.

Needless to say, there are plenty of other choices for Hungarian dishes including boar cheeks with dumplings and lamb soup with duck liver dumplings. There are also Hungarian deserts such as an almond cake, but one of the most famous is probably the chimney cake. We got our chimney cake from a food truck where it was cooked over burning embers. It is then coated with your choice of flavors and we decided on a simple cinnamon sugar. Since burgers were so prevalent, we did decide to get a burger one day and since we like spicy food, we ordered a spicy burger. It turned out to be so spicy that we were barely able to eat it.

With six days in Budapest, we didn’t limit ourselves to just Hungarian food, but also ate some seafood and Italian food as well. In the main tourist areas, you will sometimes find that the restaurants offer a “tourist menu”, which is usually a three course meal focusing on Hungarian dishes. It is probably focused on those tourists that come from the cruise ships that stop in Budapest where the people only have a single day in the city. We found some of the best restaurants tended to be in the Jewish Quarter and we even ate an excellent meal at an Israeli fusion restaurant called Mazel Tov that was recommended to us by several people.

When visiting Budapest, you will certainly have plenty of options of restaurants to choose from. We definitely enjoyed the different meals that we ate and it would be difficult to choose a favorite, but you should certainly try some of the paprika based dishes. All of the restaurants usually had English as well as Hungarian descriptions as well as German sometimes. Many of the tourist restaurants also include picture menus, but we didn’t find those to be necessary. Fortunately we did a lot of walking during our time in Budapest, otherwise all of the heavy meals might have taken their toll on our wastes.

Pot Roast with Dumplings

One of the meals that we had many different times in Europe was meat with some sort of dumpling. It would often be beef, but we also had it with pork, turkey, deer, and goose. We have enjoyed this recipe several times and it is easy to prepare and truly delicious. Rather than make our own dumplings, we use packaged biscuits which become soft and gooey when steamed. Because the biscuits are cooked in the same pot that the beef simmers in, they soak up a lot of flavor. This is definitely the type of dish that can be modified easily by adding different vegetables like onions or peppers, but we like the simplicity of the dish as we prepared it. Because it is slow cooked, the meat comes out fork tender and the sauce thickens up nicely, but if you want it thicker, you can certainly add some cornstarch to it.

Pork and Potato Dumpling in Europe

INGREDIENTS

  • 3 lb Chuck Roast
  • 2 tbsp Vegetable Oil
  • 1 tsp Garlic Powder
  • 28 oz Can of Diced Tomatoes
  • 32 oz Package of Beef Stock
  • 2 Cloves of Fresh Garlic – minced
  • 8 Whole Cloves
  • 1 tbsp Parsley – chopped fresh or dry
  • 1 tsp Red Pepper Flakes
  • 1 package of Refrigerated Biscuits
  • Salt and Pepper to taste
Brown the Roast

INSTRUCTIONS

Heat a cast-iron Dutch oven with the vegetable oil over medium-high heat. Season the beef on both sides with salt, pepper, and the garlic powder. Brown the roast in the oil for about 3 to 4 minutes per side. Add the beef stock, tomatoes, garlic, red pepper flakes, and additional salt and pepper to the pot and stir to deglaze. Heat until it starts to simmer and then reduce the heat to low and cook slowly for 2 to 2 1/2 hours until the sauce has thickened slightly and the beef is tender. Arrange the biscuits over the roast, covering it completely, and sprinkle with the parsley. Put the lid on the Dutch oven, cover tightly, and cook for 15 minutes, shaking the pot periodically. Remove the meat and biscuits to create individual servings, covering the beef with the sauce.

Eating in Egypt

We wish that we could talk about all of the unique foods that we discovered while we were in Egypt, but the reality is that we didn’t get too many opportunities. Our first four days were spent on a cruise ship going down the Nile river and all of our meals were provided for us. The food was extremely good, but except for one dinner that focused on Egyptian food, it was pretty generic. We did go out to a couple of local restaurants while we were in Cairo, but we actually found the choices to be somewhat limiting. Our hotel had several restaurants, so we did try a variety of foods at the end of the day after our tours completed, but they were somewhat international in nature. We always try to eat local food whenever possible, so we took advantage of the few opportunities that we had.

We were there just a couple of days before the start of Ramadan, which was fortunate since all of the local restaurants basically close while everyone fasts. One of the things that ate that we really enjoyed was mixed grill, which included beef, chicken, and vegetables. We also enjoyed the wonderful breads along with sesame dips and baba ghanoush, which is made with eggplant and tahini. In general, we didn’t find the food to be as exotic as some of the other places that we have visited. If we had to describe Egyptian food in general it would be that it is mostly based on breads and vegetables.

Although alcohol is not consumed by a majority of people in Egypt, they did have local red and white wine that was actually quite good. We also found a nice lager that was brewed in Egypt that was very refreshing, especially when returning from our tours in the heat of the desert. Of course we also had hibiscus juice and tea as well, which was refreshing as well. There are plenty of coffee houses with really strong, espresso style coffee, and plenty of people smoking shisha (hookah) pipes. One thing that was hard to get used to was the public acceptance of smoking in restaurants. Not only will you find an ashtray on your table, you will likely be surrounded by people smoking cigarettes wherever you go to eat, including the international hotel restaurants.
