Autumn Apple Margarita

We enjoy drinks that represent the flavors of the season and autumn is certainly one of our favorites. We had heard about a couple of variations of margaritas made with apple cider and decided to create one of our own. Steeping the apple cider with orange, cinnamon, and cloves creates an extra warmth that is enhanced by the alcohol. This recipe should probably come with a warning as it tastes so good that you won’t notice how strong the drink actually is. The cider is also delicious on its own if you don’t want the alcohol. The recipe makes a pitcher, but it can easily be paired down for individual drinks.

Pitcher of Margaritas

INGREDIENTS

  •  1 cup Gold Tequila
  •  1/2 cup Apple Brandy
  •  1 gallon Apple Cider (3 cups for drink)
  •  1/2 Orange – sliced
  •  4 Cinnamon Sticks
  •  8 Cloves
Steeping the Apple Cider

INSTRUCTIONS

Put the apple cider in a large pot.  Add the orange slices, cinnamon, cloves and heat to just a simmer over medium-high heat and then reduce the heat to low. Let it heat on low for about 30 minutes, it should not boil, to allow the spices to steep throughout the apple cider. Strain the spices and fruit and let cool. For the pitcher of margaritas, combine the tequila, apple brandy, and 3 cups of the apple cider. Serve with an apple garnish.

Marinated Chicken with a Tequila-Lime Sauce

Marinating chicken thighs with tequila and lime juice creates a very tender chicken and has the taste of Mexico.  Chicken thighs are an economical choice that provides great flavor and stays moist when grilled, but it works well with chicken breasts as well.  We’ve also used this recipe on pork tenderloin as well, since it is very versatile and definitely quite tasty.  The key is letting the chicken marinate overnight and letting the chicken soak up all of the flavor.  Jalapeño corn bread is a great accompaniment or a corn salad goes really nice as well.  We hope that you enjoy it.

Tequila Lime Chicken

Ingredients

  • 1/2 cup Tequila (silver or gold)
  • 3/4 cup Lime Juice – fresh squeezed
  • 1/3 cup Orange Juice – fresh squeezed
  • 3/4 tbsp Chili Powder
  • 3/4 tbsp Jalapeño Pepper – freshly minced (seeded if you prefer less heat)
  • 3/4 tbsp Garlic – freshly minced (about 2 cloves)
  • 1 1/2 tsp Kosher Salt
  • 3/4 tsp Ground Black Pepper
  • 4 Chicken Thighs – skin on

Instructions

In a large bowl or measuring cup, combine the tequila, lime juice, orange juice, chili powder, garlic, jalapeño pepper, salt, and black pepper.  Whisk the ingredients together.  Place the chicken thighs into a shallow pan or baking dish.  Pour the marinade over the chicken so that it covers the chicken thighs.  Cover and place in a refrigerator overnight (turning the chicken thighs over occasionally).  Heat a grill pan or grill to medium-high heat.  Remove the chicken from the marinade and grill the chicken thighs, skin side down, until golden brown, approximately 10 – 15 minutes.  Flip the thighs, reduce the heat to medium, and continue to grill until cooked through, approximately 10 – 15 minutes.  Remove from the heat and let rest at least 5 minutes before serving.
