German-Style Braised Red Cabbage with Apples

One of the side dishes that we enjoyed quite often while in Germany was braised red cabbage with apples. It was slightly sweeter than the braised cabbage that we were used to having and found it to be quite refreshing. We had it served with schnitzel, pot roast, duck, and other meats as it is a perfect compliment to gamier entrees. The only other side dish that we had as often as red cabbage was spätzle, which was often served along with the red cabbage. We served it with our pan-seared duck with a cherry compote, which was a wonderful combination. We used a granny-smith apple, but it could be done with any other apple that holds up to cooking. It was definitely a meal that reminded us of our time in Europe.

INGREDIENTS

  • 1 Medium Red Onion – thinly sliced
  • 1 Head Red Cabbage – cored and sliced
  • 1 Granny-Smith Apple – cored and cut into 1/2 inch slices
  • 2 cups Chicken Broth – preferably homemade
  • 1/2 cup Apple Juice
  • 1/2 cup Apple Cider Vinegar
  • 2 tbsp Granulated Sugar
  • 2 to 3 tbsp Vegetable Oil
  • Salt and Pepper to taste

INSTRUCTIONS

Heat the oil in a large Dutch oven over medium-high heat and add the onions and about a teaspoon of salt. Cook the onions until they are tender and translucent, about 7 to 8 minutes. Add the cabbage, apple, chicken broth, apple juice, apple cider vinegar, sugar, salt and pepper to the onions and stir to mix. Cover, reduce the heat to low, and cook until the cabbage for an hour.

Fest Des Federweissen (Fall Wine Festival) in Frankfurt, Germany

It is hard to believe that it has been four years since we sold our home and moved to Frankfurt, Germany. It was a wonderful experience that gave us the opportunity to see many different cities and countries. During our first week in Frankfurt, we enjoyed the first of many festivals that we would get to see during our time there. The Fest Des Federweissen is a celebration of the wine harvest and specifically in Frankfurt it is about the Apfelwein. Traditionally Apfelwein is served in a pretty little jug called a Bembel and we actually received one from one our favorite restaurants as a gift before moving back to the United States.

Although wine is the star of the festival, it wouldn’t be a German festival without many varieties of food stalls, especially those selling sausages (wurst). The festival was located between Frankfurt’s busy shopping district and the old town (Altstadt) square. Although we would later go to many different Christmas markets throughout Europe, this little festival was just a small taste of what we would get to enjoy. With this year being the way it has with very little opportunities to explore places, we are definitely missing the time we spent living in Germany.

Walking Our Neighborhood in Frankfurt, Germany

One of the things that we did just before moving back to Colorado from Frankfurt was to take our normal walk through the neighborhood and take photographs. For the most part, we took them so that we would have them to remember our time there and the places that we visited frequently. They obviously aren’t the typical tourist type of pictures, but it might give you a sense of what it is like there. Our apartment was located between the university and the old opera house and we walked these streets every day as we didn’t have a car and used public transportation to get around. We got used to going to different stores with apartments above them for dry goods, meat, produce, bread, and of course the pharmacy. So, join us as we walk from our apartment building towards Altstadt in Frankfurt.
