Cabo San Lucas

We’ve been home from Cabo San Lucas for a little over a week now and we’re already going through withdrawal.  We’ve had one blizzard since getting home and are expecting snow on Thanksgiving, so the sun and beach seem like a distant memory at this point.  We truly had a wonderful time visiting Cabo and walking around town and through the marina.

As you walk through the marina, you’ll continuously be approached by sales people trying to get you to take a glass bottom boat, take you deep-sea fishing, go on a time share tour, or play golf at one of the many courses around the area.  It is definitely worthwhile taking a glass bottom boat out to the arch and to go to lover’s beach.  The marina is also where you board the different dinner cruises, party boats, and fishing boats.  We’ve done many of the different dinner and sunset cruises, but haven’t gone deep-sea fishing as of yet, perhaps on our next trip to Cabo.

There are many wonderful restaurants in the marina as well, all of them offering fresh seafood and tasty drinks.  On Sunday, while we were there, we came across a restaurant offering all you can eat oysters.  Since we love oysters, we definitely took advantage of that opportunity.  At night-time, the marina area really comes to life with plenty of things to do and opportunities to people watch.

The downtown area also has plenty of vendors where you can purchase local trinkets and bargain with the store owners to get the best price on you souvenirs.  At first it might feel awkward haggling over the price, but it is expected and don’t feel intimidated.  If you don’t want to go downtown, there are plenty of vendors walking up and down the beach bringing souvenirs to all of the resorts for you to purchase.

At the resorts themselves, you can arrange kayaking, paddle boarding, parasailing, jet skis, golf, and more.  There are also people walking the beach with horses so that you can take a romantic horse back ride along the beach.  Our favorite thing about Cabo is the size of the resorts.  There aren’t huge resorts with thousands of rooms, so whether going into town, walking the beach, or sitting around the pool, you’re not overwhelmed by tremendous crowds.  We can hardly wait for our next trip to the beach, but it is going to have to wait for a little while.

Bacon Wrapped Crackers

Needless to say, sometimes something super simple can be absolutely delicious, especially when it has bacon.  This is the case with these bacon wrapped crackers.  They don’t take much time, are simple to do, and are truly a crowd pleaser.  They are perfect for a holiday or tailgate party and can be served warm or at room temperature.  If they weren’t so decadent, we’d make them for a weekend afternoon snack while we’re watching sports, but these aren’t your everyday type of snack food.  While you can probably make these with almost any type of cracker, we’ve found that rectangular crackers work the best.  And don’t choose a saltine cracker, you need one with some buttery flavor to it, after all, you won’t find this in any diet books.  We hope you enjoy them as much as we do.

Bacon Wrapped Crackers

Ingredients

  • 36 Buttery Crackers – Rectangular (such as Town House)
  • 12 Slices of Bacon (not thick sliced)
  • 1/4 cup Parmesan Cheese – finely grated

Instructions

Cut the bacon strips into thirds, which should result in 36 slices of bacon approximately 3 to 4 inches in length.  Wrap each cracker around the narrow side with a slice of bacon, being sure to overlap the edges where the strips meet.  Place the bacon wrapped crackers, with the side where the bacon edges meet down, onto a baking sheet with a rack or parchment paper.  Preheat an oven to 425 degrees.  Cook the bacon wrapped crackers for 12 to 15 minutes or until the bacon is crispy.  Immediately upon removing the crackers from the oven, sprinkle with parmesan cheese.  Serve warm or at room temperature.

Maximize Your Food Experience

One of the things that we do whenever we travel, whether in state or to another country, is to have appetizers at a couple of different restaurants every night that we’re there.  We’re not big eaters to begin with, so sitting down and finishing a large meal most likely means leftovers that will end up being thrown away.  So, instead we have several small appetizers, basically tapas style that we can both share, which allows us to try several different dishes.  This is especially true when we’re travelling to a place where the food is so diverse or exotic, like when we were in India.  Because we don’t want to take up a table, we’ll usually sit at the bar or in the lounge.  We tend to feel that we get better service when sitting at the bar because you get a chance to actually talk to the bartender and get to know them a little.  If we find a place that we really like, we might visit them several times while we’re travelling, but still going to at least one different place in the same night or day.

We tend to walk as much as possible when we’re visiting someplace new.  This allows us to really get a feel for the city, but also allows us to stop at a variety of places to eat or find places that we’ll want to come back later and grab a bite.  Walking also has the added benefit of working up an appetite or burning off the food we’ve just consumed.  Because we don’t tend to keep ourselves on a tight agenda, this allows us to just pop into a place that looks interesting and give them a try.

If you really want to savor more flavors of a country, city, or region, try going to several restaurants, pubs, or eateries and sampling a few small plates at each one.  Or, better yet, wander through the city, stopping every now and then to experience something a little different everywhere you go.  You will get to meet more locals, savor more food, and enjoy more of what the city has to offer.
