Unfortunately, meanwhile original Amsterdam life has left the Grachten area more or less, gentrification has long since taken place there. In the old brown cafes, you will meet tourists and students, but practically no “born Amsterdammers” and the Amsterdam atmosphere with its specific kind of Amsterdam music and tales is gone.
By the way, in Leipzig, Germany, I would advise taking a canoe tour to explore the city.
