The Food of Hanoi, Vietnam

During our trip to Vietnam, we enjoyed a variety of wonderful meals with different types of food. There were plenty of seafood, pork, and beef dishes, including Bún Chả and Phở. We also had the opportunity to take a local cooking class, which was one of our favorite memories of our time in Hanoi. In addition to eating at several restaurants in Hanoi, we also took several day trips that allowed us to taste food from the countryside as well.

Fried Spring Rolls
Grilled Mekong Catfish
Beef, Eggs, and Bok Choy
Bún Chả

Bún Chả is a traditional Vietnamese dish that originated in Hanoi and is made with grilled pork and noodles with a dipping sauce. It is usually served with condiment bowls of minced garlic and sliced hot peppers that can be added to your individual taste. Fried spring rolls are also commonly served with Bún chả. We definitely enjoyed eating Bún Chả and even visited the Bun Cha Ta restaurant twice during our stay in Hanoi. Bún Chả was also one of the items that we learned to make during our cooking class and we’ll definitely be making it for ourselves at home.

Phở
Spicy Peppers
Spring Rolls and Dipping Sauce
Steamed Shrimp

Phở is a Vietnamese soup that is usually made of beef, broth, herbs and noodles, but it can be made with chicken or pork as well. Unlike Bún Chả where you don’t drink the broth, Phở is a soup and you eat the meat and noodles with chopsticks and use a spoon to eat the broth. Once again you can add hot peppers to your Phở in order to make it spicier, but add them slowly as they are very spicy. Our hotel recommended that Pho 10 Ly Quoc Su, which is in the old quarter near way were staying and based on the lines, it is extremely popular with locals and tourists alike.

Egg Coffee
Fried Fish and Vegetables
This was Just for the Two of Us
Goat Stew

Egg Coffee is another traditional Vietnamese item and something that we had a couple of times and also made during our cooking class. It is coffee that is made with egg yokes and condensed milk, which makes it rich and sweet. We also ate seafood at a restaurant on the shore of Hoan Kiem Lake as well as during our overnight cruise on Halong Bay. During our tour to Ninh Binh, we were treated to a meal with fried spring rolls and a stew made with goat, potatoes, and carrots. Goat was a traditional dish for the Ninh Binh Province. During our tour of Perfume Pagoda, we were treated to an overwhelming array of local dishes that included beef, pork, chicken, and vegetables.

Steamed Crab in the Shells
Beef Stir Fry
Squid with Celery and Leeks
Cooked Banana with Chocolate and Coconut

Obviously there are plenty of restaurants featuring western food, but we only ate at restaurants featuring local cuisine. Our chopstick skills definitely improved during our time in Vietnam as well since they were often the only utensils offered. We certainly enjoyed trying as much of the famous street food of Hanoi and the surrounding area as possible. We are definitely looking forward to recreating as many of the meals as we can in the upcoming months.

Fish and Seafood Recipes for All Seasons

We enjoy eating seafood whenever we travel to places, especially those located near the ocean. Our choices for fresh seafood can be somewhat limited at times, but that doesn’t mean that we don’t enjoy trying to recreate some of the meals that we’ve had throughout our travels. Regardless of the time of year, we can always find a seafood recipe that meets the need of the season. Although we often think of eating seafood during the summer months when we’re looking for lighter meals, that doesn’t mean that there aren’t recipes that work perfectly for the cold winter nights as well. Here are a few of our favorite recipes that we have created in the past.

  1. Pan Fried Tilapia – Lightly breaded with herbs and lemon, this dish can be paired with just about any side-dish. It is great for a weekday dinner, but is versatile enough to serve for a special occasion.

  2. Seared Scallops with a Lemon Butter Sauce – Sea scallops make for an easy and elegant meal, especially when sautéed with lemon, butter, and little bit of saffron. Served over a bed of pasta, it is a delicious meal for any time of year.

  3.  Pumpkin-Sage Shrimp – If you are looking for a seafood recipe that is perfect for autumn, then pumpkin-sage shrimp is a perfect solution. It is also a meal that works perfectly with scallops as well.

  4.  Crab Lasagna – Using a béchamel sauce with crab meat to create a lasagna is an excellent way to take a new twist on an old favorite. Since it is warm and cheesy, it is a perfect meal for a cold winter night.

  5. Salmon Oscar – Serving a breaded, crab mixture over steak or flounder is quite common, but we had Salmon Oscar in Old Town Alexandria in Virginia. We loved it so much that we had to create it ourselves for a wonderful dinner at home.

  6.  Shrimp and Grits – Grits are very similar to palenta and it pairs perfectly with shrimp. We have had shrimp and grits in several places, including our recent trip to New Orleans. This one is a little unique as it is paired with a soft-boiled egg.

  7.  Salmon with an Herb and Honey Sauce – Sweet and savory sauces work great with salmon and we have tried several different styles. This is a perfect meal for a warm summer day or even a cold autumn night.

  8.  Shrimp Frittata – This was a recipe that we did not that long ago and it was a great way to do something different with shrimp. Frittatas are so versatile and can be a perfect vehicle for serving whatever vegetables are in season at the time of year that you are cooking.

Having had so many unique seafood dishes around the world, taking a look back at our recipes has reminded us that we have not recreated nearly enough of them. It really is one of our favorite things to do, to recreate a meal from someplace we’ve visited and letting the flavors take us back to the time we were traveling. Tastes and smells are as much of a reminder of places as the photographs that we have taken.

Hearty Stew

No matter where you travel, you will likely find a local variation on a hearty stew with a mix of meat and vegetables. Stews are basically the same as soups where the solid ingredients outweigh the broth. One of the nice things about stews is that they are very economical as stewing meats are inexpensive and the meat and vegetables can be substituted for whatever is in season at the time. This meal uses ground beef as its base, but it would be equally delicious with beef, pork, or lamb chunks or you can leave out the meat completely to make it vegetarian. This particular stew is meant to be a little bit lighter, but if you wanted to make it even heartier, you could use beef stock and a thickener to create an almost gravy-like consistency. It is one of our Autumn, “go-to”, meals and we always enjoy it.
