Las Vegas, A Food Destination

We took advantage of some time off to take a trip to Las Vegas once again. Vegas is an easy trip from Colorado as there are a lot of inexpensive flights and, since we have a timeshare there, inexpensive rooms. This was our fifth trip to Las Vegas, but for us, it isn’t about gambling or even the glitz and glamour.  We actually used our trip to have some down time, relax, enjoy some incredible food, and simply connect with one another.  And yes, we stayed on the Las Vegas strip, albeit in the Trump Tower, which allowed us to get away from the noise of the casinos.

If you haven’t been to Las Vegas lately, you might be surprised by all of the top chefs with restaurants in the casinos.  Las Vegas has gone through several transformations over the years.  Obviously, everyone knows about the early days when Sinatra, the Rat Pack, and the mob ruled the town.  Then, in the late 80’s and early 90’s, they tried to become a family friendly destination.  After losing millions in revenue, it was a return to the original formula as they rolled out the “what happens in Vegas, stays in Vegas” campaign.

Now, it is definitely a destination for “foodies”.  Wherever you turn, you’ll see signs and billboards for the famous chefs and their restaurants.  You see names like Emeril Lagasse, Mario Batali, Bobby Flay, Giada, Gordon Ramsay, Wolfgang Puck, and many, many more.  You may have to fight your way through the casino floors and the incessant ringing of the video slot machines, but you’ll be well rewarded if you do.  The days of the cheap buffet and the nickel steaks are definitely a thing of the past.  The food is fantastic and, depending on the time of year, you’ll want to make reservations if you want to enjoy the creations of your favorite chef.  Maybe, if you’re lucky, you’ll even see your favorite chef in person or perhaps another celebrity enjoying everything that the Las Vegas strip has to offer.

Obviously, there are also a ton of shows, with every large casino offering some sort of Cirque Du Soleil extravaganza.  Magicians, comedy acts, and a plethora of singers.  Night clubs too, can be found to meet every style and taste.  But there are other things to do as well.  There is the top of the Stratosphere, the CSI Experience, the Titanic Exhibition, the Bodies Experience, Mob Museum, Siegfried and Roy’s Secret Garden and Dolphin Habitat, Pin Ball Museum, helicopter tours, tours to the Grand Canyon, and much more.  We’ve done many of these and they are all well worth a try, although many of them can be quite pricey.

As we mentioned before, this was a relaxing trip for us, so we made our way through several restaurants.  The highlight was dinner at the Eiffel Tower Restaurant with its spectacular views of the Bellagio fountains.  We also ate at Gordon Ramsay’s Pub, Emeril’s Plate, the DB Brasserie, Cucina by Wolfgang Puck, the Nine Fine Irishmen, and many more.

If you’re thinking about going to Las Vegas and have never been before, you really should go, at least once.  Every time we visit, we always see something that we haven’t seen before.  Vegas isn’t just about gambling and shows, but from our perspective, it is an adult destination.  We see a lot of families walking along the strip, taking pictures with the many costumed characters, but you’ll also be constantly barraged with flyers for strip clubs and adult shows.  So, definitely visit Las Vegas, but in our opinion, you should leave the little ones at home.

Chili Mac – Traditional Comfort Food, Non-Traditional Recipe

This is one of our favorite winter time recipes.  This might not be what you typically think of when you think of chili mac, but it is really, really delicious. 🙂  There is something about the tang of the vinegar combined with the spice of the chili powder that makes this dish stand out.  Obviously you could use macaroni noodles, but the spaghetti noodles work so much better because they simply add a layer of flavor because they aren’t as thick as macaroni noodles.  It is also a one pot dinner where we use a short cut to make it easier, but you certainly could make the chili from scratch if you’d like.  If you’re willing to give it a try, we think it might become one of your favorite recipes as well.

Cooked Chili Mac

Ingredients

  • 1 lb Lean Ground Beef
  • 3 – 15 oz Cans of Chili (you’re favorite brand)
  • 4 tbsp Chili Powder (half hot and half regular if available)
  • 1 1/2 tbsp Granulated Garlic Powder
  • 1 1/2 tsp Salt
  • 1 1/2 tsp Freshly Ground Black Pepper
  • 1 1/2 tsp Cayenne Pepper (optional)
  • 3/4 cup Apple Cider Vinegar
  • 8 oz Thin Spaghetti Noodles (half of a 1 lb package)

Instructions

Add the ground beef, chili powder, garlic powder, salt, and pepper to a large sauce pot and brown the ground beef on medium-high heat.  Browning the ground beef with the spices will allow the meat to absorb the flavor as it cooks.  Add the three cans of chili, retaining the cans.  Stir the ground beef with the chili.  Fill each chili can three-quarters of the way to top with water, swirling the water as you fill them to get any additional sauce from the sides of the can.  Add the vinegar and the water from the three cans to the pot.  Stir in the cayenne pepper and bring to a boil and then reduce the heat low.  Cover and simmer for 2 to 3 hours.  Increase the heat to medium-low and add the spaghetti noodles in small batches to the pot (you can break the long noodles into shorter pieces, if you prefer), stirring them in as they are added.  If you add the noodles all at once or in large handfuls, they will stick together and not fully cook.  If there isn’t enough liquid to cover the noodles, add enough hot water to ensure that the noodles have enough liquid to absorb.  Cooking the spaghetti noodles in the liquid from the chili will allow them to absorb all of the spices and flavors from the chili while they cook.  Cook the noodles until they are at the desired tenderness.

Shakespeare and Santa Claus

We were fortunate enough that when we went to Stratford-upon-Avon, we joined the locals in celebrating the arrival of Santa Claus. It was truly a magical experience and the town of Stratford-upon-Avon was everything that we expected for a small English village.  There is something special about walking the streets of a town so rich in history, thinking about all who have walked those same footsteps.  The shops, pubs, and people were all extremely welcoming as the holiday spirit certainly filled the air.

The town of Stratford-upon-Avon is a tourist destination due to the fact that it is the birthplace of William Shakespeare, but we were surrounded more by locals than tourists while we were there.  The Royal Shakespeare Theatre is located in Stratford where the plays of Shakespeare are still performed.  The original charter for the town was granted in 1196, making it over 800 years old.  Located in Warwickshire, England, nestled along the River Avon, it is truly a destination well worth visiting.  Seeing the home where Shakespeare was born is a memory that will stay with you forever.

The most memorable part of the visit, however, was when everyone gathered in the center of town outside of the Town Hall on Sheep Street to wait for the arrival of Santa Claus.  After it turned dark, the town officials came out onto the balcony to address the crowd.  Then, to the excitement of the children and adults alike, Santa Claus appeared on the roof, waving to the crowd below.  After seeing the arrival of Santa Claus, we went to one of the pubs where there were large punch dispensers with mulled wine to warm the belly as much as our hearts had been warmed.

The following day, we joined other holiday shoppers in the market that had been set up to sell a wide variety of crafts and products.  We also visited the various shops that were all festively decorated for the holiday season.  We purchased holiday decorations for family and friends as well as some for ourselves.  We ended up buying another suitcase, just so we could bring home everything that we found while we were there.  There were also plenty of restaurants with local fare to eat, such as the traditional fish and chips, bangers and mash, steak and ale pie, and bubble and squeak.  Needless to say, besides the mulled wine, there were plenty of pints of ale to be found and we enjoyed several of them.

This was truly one of the highlights of our visit to England.  We had been in London prior to heading to Stratford-upon-Avon and it was almost as if we’d travelled back in time.  I’m sure that it is beautiful during the summer, but if you get the chance to visit during the holiday season, we’d highly recommend it.  Stratford-upon-Avon will stay in our hearts for many years to come.
